While we are huffing and puffing to get fit, we often chat with one instructor (between exercise moves) about favorite recipes, current events, and more. Here is Kathleen G&#8217;s recipe for her favorite Wine Cake \u2013 my mother called it Sherry Cake, and it is REALLY DELICIOUS! (the alcohol bakes out\u00a0\u2013\u00a0the rich aroma and flavor remains)<\/p>\n<p>WINE CAKE<\/p>\n<p>1 box yellow cake mix<br \/>\n1 small box vanilla pudding mix<br \/>\n3\/4 cup vegetable oil<a href=\"https:\/\/www.jankrentz.com\/weblog\/wp-content\/uploads\/2010\/01\/WineSherryCake.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-medium wp-image-1245\" title=\"Wine Sherry Cake with glaze topping\" src=\"https:\/\/www.jankrentz.com\/weblog\/wp-content\/uploads\/2010\/01\/WineSherryCake-300x234.jpg\" alt=\"\" width=\"241\" height=\"191\" \/><\/a><br \/>\n3\/4 cup sherry<br \/>\n4 eggs<br \/>\n1 tsp cinnamon<br \/>\n1\/4 tsp nutmeg<\/p>\n<p>Mix all ingredients well with a mixer. Bake in a greased bundt pan for 40 minutes or until toothpick comes out clean. Let stand for 40 minutes before serving.<\/p>\n<p>FROSTING<\/p>\n<p>1\/4 cup powdered sugar<br \/>\n1\/4 tsp nutmeg<br \/>\n2 Tbsp. sherry<\/p>\n<p>Whisk together (add sugar and sherry to get desired consistency) and pour over cake. (I poke the top of the cake with a fork so the frosting will soak in. I also wait til the frosting isn&#8217;t as wet and I sift powdered sugar over the top for a prettier effect!). Enjoy with coffee!! Kathleen<\/p>\n<p>Jan&#8217;s note: Other options for topping:<\/p>\n<ul>\n<li>sprinkle powdered sugar over top (lightly)<\/li>\n<li>mix 2-3 T. frozen concentrated orange juice into powdered sugar, stir; spread over warm punctured cake<\/li>\n<li>grate lemon zest and squeeze lemon juice into powdered sugar, stir &amp; spread over warm punctured cake<\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>Our water aerobics class is so much fun!
